Wade Murphy's warm pear & almond pudding: Today

Ingredients

Serves: 4

  • 2 medium sized pears, cored and thinly sliced
  • Juice of 1/2 lemon
  • 2 tbsp flaked almonds
  • 2 tbsp golden raisins
  • 80g plain flour
  • 30g granulated sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 300ml full fat milk
  • Butter for greasing
  • Icing sugar for dusting
  • Vanilla ice cream to serve

Method

  1. Preheat oven to 180oC.
  2. Lightly grease 4 x 250ml dishes with butter.
  3. Put pear slices and lemon juice into a bowl and mix to combine
  4. Then layer the pear slices and raisins into the dishes.
  5. Whisk together the flour, sugar, eggs, vanilla and milk and pour over the pears. Top with the flaked almonds and bake for 20 to 25 minutes or until set.
  6. Remove from the oven and dust with icing sugar and serve with vanilla ice cream.
