Beat the back to school blues with these lunchbox ideas

It's great to get back in a routine, but the first few weeks can be tricky getting into the swing of the uniforms, the homework, the drop-offs, the pick-ups - not to mention having to plan school lunches and dinners that will actually get eaten.

With that in mind, Kerrigan’s Craft Butchers has created some quick, affordable and nutritious lunchbox recipes to entice even the pickiest of eaters.

Managing Director, Barry Kerrigan said: "As a dad of two girls in primary school, I totally understand how hard it can be for kids and parents to get back into a routine after the summer break."

"When it comes to lunch and dinner, spending a few minutes planning meals ahead of time each week is definitely worth it," he adds.

"Not only does it mean you don’t have to think on the spot every day, you also save money by knowing exactly what you need to buy. If you have the time, I recommend batch cooking. Being totally honest I consider freezer stocking a family survival skill. By cooking in batches the freezer becomes the go-to place for healthy and tasty meals. The key is labelling – after all, there are few things less confusing than a freezer of mystery foods."

Lunchbox Kebabs
"If your kids often come home from school with their lunch still in their lunchbox, I suggest using ham slices and turkey slices to make lunchbox kebabs – they are quick to make but fun enough to distract kids from the foods they might not be crazy about. Simply cut and fold the meat slices and slide on to a small wooden skewer. You can add squares of bread, pickle, egg, cheese, apples, grapes, cucumber too – whatever your little ones prefer."

Note: If your little ones are too little for handling skewers, simply have the cut up into manageable pieces that can be picked up by hand.

Chicken Rice Paper Rolls
"We’re all trying to be more mindful of food waste – not only for the environment but also to make our money go as far as possible – so this is a great recipe for leftovers. I often use chicken from leftover fajitas, or the roast on a Sunday. Fill a large bowl with warm water and dip your rice paper sheets one at a time for about 30 seconds. Remove each sheet, place on a flat work surface and pop in your chicken and veg mix. Job done!"

Cucumber Sushi
"This is a favourite one in my house, especially with my older girl who likes to think of herself as a bit of a foodie. And it’s as easy as making a sandwich. All you do is thinly slice your cucumber to create a long strip. Spread on some cream cheese, and add your preferred toppings such as turkey or ham slices, and some veggies like peppers or carrots. To finish you just roll it up and seal with a toothpick. I like to add in some rice to provide extra grains from time to time too. If your kids aren’t big fans of cucumber, you can easily replace it with strips of bread or wraps."
