Wade Murphy's easy berry pudding: Today

Ingredients

Serves: 6-8

Prep time: 10 mins

Cook time: approx 40 mins

  • 125g soft unsalted butter
  • 100g caster sugar
  • 120g self raising flour
  • 1 tbsp custard powder
  • 2 large free eggs
  • 180 ml whole milk
  • 2 drops vanilla extract
  • 140g mixed seasonal berries, you can use frozen if you prefer
  • Whipped cream and extra berries to serve

Method

  1. Preheat the oven to 180oC/160oC fan.
  2. Using about electric mixer combine butter, sugar, flour, custard powder and eggs. Mix for about 2 minutes. Stir in milk and vanilla extract. This can split slightly but don't worry that’s not a problem, it will still work.
  3. Grease a shallow baking tray and pour in the batter mix and top with the mixed berries. These will sink into the batter mix as it cooks which is perfectly ok.
  4. Place into the oven and bake for 40 - 45 minutes or until pierced with a skewer and it comes out clean.
  5. Remove from the oven and allow to cool slightly before serving.
  6. Serve with whipped cream and extra berries.
